Nishi no Kakure

The name says most of it. Sushi-dokoro Nishi no Kakure (すし処 西の隠れ) — roughly, "the hideaway of Nishi" — is an eight-seat counter tucked into Nishi-Nakasu (西中洲), the more composed, grown-up edge of Fukuoka's famous nightlife island. Where Nakasu proper runs loud and bright, Nishi-Nakasu keeps its better counters behind quiet doors, and this is one of them: a small room you arrive at on purpose, not one you stumble into between bars.

Its chi-no-ri (地の利) is the location itself as much as the Genkai-nada (玄界灘) catch it draws on. To sit at a serious eight-seat sushi counter and step out, afterward, into the river-lit lanes of Nishi-Nakasu is a particular Fukuoka pleasure — the meal and the city's evening folded into one walk. The sea supplies the familiar northern-Kyushu argument: wild fugu, squid, the deep-fat aji (鯵) that travels so poorly it is best eaten close to where it was landed. At ¥16,500 for the evening, it sits squarely in the city's value band, a hideaway you can actually afford.
