Hatakeyama

This is one of the smallest counters we have mapped in Niigata: six seats, and little more. In a city whose sushi reputation rests on its two-star rooms, Hatakeyama (鮨はたけやま) belongs to a quieter category — the intimate, low-volume counter that trades fame for proximity, where the entire evening's service is six people and one chef. There is a particular wabi to a room this small: nothing to hide behind, no second seating to manage, just the fish, the rice, and the hands that join them.

The chi-no-ri (地の利) is the prefecture's own — the Japan Sea catch that defines the Niigata-mae idiom, nodoguro and nanban-ebi among the likely players, over Koshihikari shari. At ¥15,730 to ¥16,500, it sits at the accessible end of Niigata's serious counters, which is much of its appeal: an ultra-small room at a figure that does not demand the budget of a starred reservation.
