Beppu opens directly onto the Bungo Channel (豊後水道), and Hasshin builds its ¥22,000 omakase on the channel's greatest hits — the celebrated seki-aji (関アジ) and seki-saba (関サバ) whose firm, fatty flesh owes everything to the strait's racing tides, and the prized winter fugu. This is chi-no-ri (地の利) at its most legible: a town's own famous fish, served a short walk from where they land. Around that core the kitchen ranges wider — dobin-mushi, even foie gras among the courses — so the nigiri ratio runs medium rather than single-minded.

If you come wanting the austere, nigiri-forward purity of a traditional Edomae counter, Hasshin's creative breadth — the foie gras, the kaiseki-style flourishes — may read as a different art form than the one you booked, and its sociable, occasionally event-driven atmosphere can dilute the contemplative hush some seek at the wood. Come instead for what it actually is: the Bungo Channel's bounty, served with flourish, in the heart of a hot-spring town.
