Sushi En (鮨 縁) is the one against which the rest of Okayama is measured — the prefecture's only Michelin two-star sushi, three toques from Gault&Millau, and a Tabelog Award holder, all delivered across eight seats and a single 18:00 start. Chef Sato Katsuaki (佐藤克明) spent fourteen years at the local institution Fukuya (富久屋) before opening his own room in 2008, and the patience of that long apprenticeship is the through-line of the meal: a chef in no hurry, working a small box he can see end to end.

The sourcing is the quiet boast. The kitchen draws one hundred percent of its seafood from the Seto Inland Sea (瀬戸内海) and Okayama itself — no Toyosu hub, no compromise. This is chi-no-ri (地の利), the advantage of place, taken to its conclusion: the calm, current-stirred waters of the Setouchi yield firm-fleshed white fish, tako (蛸) octopus, and shellfish of a cleaner, gentler character than open-ocean catch, and Sato lets that gentleness lead. Expect roughly eight tsumami courses opening into ten or eleven nigiri — a deliberate, dinner-length arc rather than a sprint.

The room is the rarest kind: small enough that the whole counter starts together, watches together, and finishes together, as if attending a single performance. There is a discipline in the simultaneous seating that suits the cooking — no stragglers, no second wave, only the eight of you and the chef's hands.

The honest costs are real and worth naming. The list-price hovers near ¥29,700, but seasonal ingredients can push the bill past ¥30,000 — confirm the all-in figure, including any service charge, when you book. Payment is cash only, and the reservation is among the hardest in the prefecture; OMAKASE alerts and persistence are the realistic path in.
