It is the counter to know when you want a real chef's sushi in the city without the planning or the price of the prefecture's headline rooms, and it earns its place on craft rather than spectacle.

The chef trained for roughly two decades at sushi houses in Utsunomiya and nearby Nikko (日光) before opening his own room in October 2022, and that grounding shows in the details he chooses to fuss over. The shari is an original red-vinegar (赤酢, aka-zu) blend — the darker, rounder rice that signals a kitchen thinking past the default — and the fish comes direct from Toyosu and Hokkaido, supplemented by what the chef hand-picks at market himself. The counter is where the meal is meant to be eaten, in conversation with the chef about the day's catch and the sake to set beside it; reviewers describe an easy, knowledgeable host as comfortable talking washoku and nihonshu as fish.

The price tells the truth about the ambition. At ¥12,000 the omakase sits below the center of the satisfaction band — this is an accessible counter, not a special-occasion one, and the value lies in getting an aka-zu, Toyosu-sourced omakase from a twenty-year hand at a weeknight price. Lighter à la carte and lunch options (a 13-piece set runs ¥3,800) make it one of the few rooms here you could visit on a whim.

Two honest caveats. First, the counter is small in every sense — only 4 of the 19 seats face the chef, with the balance in tables and a semi-private room; this is fundamentally a table house with a counter, so request a counter seat when you book or the small-box appeal evaporates. Second, the room is young — open since late 2022, with a modest review base (Tabelog 3.25 on 21) that has not yet had time to settle. The photography policy and service charge are unstated; confirm both, along with a counter seat and the omakase price, when you reserve. Come for an honest, accessible city counter — not for a hushed six-seat pilgrimage.
