Chef Nishizaki (西崎) runs the eight seats himself, building a course of four or five tsumami into eight to ten nigiri — the "land-and-sea" (水陸) structure the shop is known for, generous on the rice that purists come for.

Roppongi is about as far from a fishing port as Tokyo gets, yet the kitchen reaches north for its supply, pulling the cold-water clarity of Hokkaidō's catch into the middle of the city. That deliberate reach is chi-no-ri (地の利) by intent rather than geography — a small counter choosing its waters and building a direct line to them, which is the harder, better way to do it in a market where everyone can simply buy at Toyosu.

The honest caveat is temperament. This is Roppongi, and the signature presentation leans toward the visual — the "picture" of the plate is part of the draw.
