GEJO

GEJO is the one entry on this list you choose as much for where you sit as for what you eat. It occupies the historic district of Iwase — once a prosperous port on the kitamae-bune shipping route, now one of the best-preserved merchant townscapes on the Sea of Japan coast, its wooden facades and latticed windows largely intact. To dine here is to dine inside a piece of old Japan that most visitors never reach, fifteen minutes north of the modern city.

The cooking earns its setting: GEJO holds a place on Tabelog's Hyakumeiten — the crowdsourced "100 best" list that Japanese diners take seriously — and identifies as a Japanese restaurant that happens to serve excellent sushi, rather than a counter alone. Its courses blend nigiri with broader seasonal cuisine, and a tiered structure (roughly ¥6,000 to ¥14,000) lets you calibrate the evening to your appetite and budget in a way few omakase rooms allow.

Set your expectations accordingly. The nigiri purity is lower here than at a dedicated sushi-ya — this is a restaurant experience with sushi inside it, not a sushi pilgrimage — and the Iwase location adds a taxi ride and a return to plan for. But for a traveler who wants the meal and the place to be the same memory, who would rather eat well inside a living historic street than at the most technically perfect counter in a nondescript building, GEJO is the most atmospheric choice in Toyama. Pair it with a daylight walk through Iwase's old houses and sake breweries, and the dinner becomes the close of a complete day.
