This is the place where two seas collide — the cold, clear Sea of Japan pouring south through the narrow throat of the Kanmon Straits (関門海峡) to meet the gentler, island-studded Seto Inland Sea. The currents quarrel there, and the fish that thrive in contested water are leaner, firmer, more various than the catch of any single sea. For a sushi chef, it is one of the richest larders in the country, and Sushi Sumitani (寿司 すみたに) is built squarely on it.

The room is small and warmly run — a husband-and-wife counter of eight seats, the kind of place where the okami's welcome is mentioned in nearly every account as often as the fish. Expect the meal to lean on Kanmon Strait jizakana (地魚), the local catch, with a handful of tsumami opening the way — sashimi, perhaps akashi-ebi shrimp, a sazae turban shell grilled in its shell — before the nigiri takes over. The ji-no-ri here, the advantage of place, scores among the strongest in all of Yamaguchi; this is sourcing you can taste the map in.

The price sits around ¥18,000, with drinks rarely pushing a couple past the mid-twenties — generous value for a counter this close to its source. That very affordability is also the one honest caveat: at a price below the satisfaction band where the most elaborate omakase tend to live, the depth of the composition may read as simpler, more direct, than a premium Tokyo or Kanazawa counter. Whether that reads as a limitation or as a virtue depends on what you came for. A single table beyond the counter slightly dilutes the purity of a true counter-only room, though the eight seats remain the heart of the experience.

Booking is by telephone, in Japanese, and the restaurant closes on Sundays. There is no English reservation channel here, so plan accordingly or enlist help. As always, confirm the tax-inclusive price, whether a service charge applies, and the photography policy when you call — Shimonoseki counters are generally relaxed about it, but the courtesy of asking costs nothing.
