Soushi

Soushi makes the clearest case in central Hiroshima for what might be called "Setouchi-mae" — sushi defined by the catch of the Seto Inland Sea the way Edomae was defined by Edo Bay. The sourcing leans hard into the local water, which is the whole reason the counter scores as well as it does on chi-no-ri (地の利): the white-fleshed fish, octopus, and conger of the inland sea, handled close to home rather than routed through a distant market. At ¥22,000, it lands right in the price band where an evening feels like an occasion without tipping into excess.

This is a slightly different proposition from the prefecture's smallest one-man rooms. The counter seats fourteen and runs a two-part rotation with a simultaneous start, which gives the evening a more theatrical, performed rhythm — a room of guests moving through the course together, the chef working the full bar at once. For some diners that shared momentum is part of the pleasure; for others it is a trade against intimacy. The nigiri ratio is more balanced than the high-nigiri counters here, with tsumami given real weight alongside the rice.

In its favor on the practical axes: photography is allowed — a welcome certainty in a region where most counters leave the policy unstated — and the room carries a solid base of guest goodwill online. Booking runs through OMAKASE, Gurunavi, or the phone.

The honest caveat is built into the format. Fourteen seats and a double seating mean this is not the place to come if a hushed, low-rotation counter is your single highest priority — the energy is communal and brisk by design. Come for the clarity of the Setouchi sourcing and the shared theatre of the room; look elsewhere in the prefecture if you want to be one of eight quiet guests watching a lone chef work.
