What returned with him is technique applied to local material: hirame, katsuo, and the delicate shirauo (白魚) of the Joban waters, sourced through a middleman at Kuji Port rather than trucked down from a metropolitan hub. His wife works the room as sommelier, pairing sake to the progression.

Where Sushi Ono frames its room around a bamboo grove and Sushidokoro Shu offers Toyosu craft a walk from Tsukuba Station, Matsuei's distinction is sourcing philosophy — the most explicit local-water argument in Ibaraki. Matsuei runs on market pricing, so the headline ¥23,500 can climb past ¥30,000 once the sake pairing is added — exactly the variability that makes this a counter to confirm rather than assume.
