Two minutes from Fujisawa Station, down in the basement of a building on the city's south side, Sushi Kuwae (鮨 加) is a counter-only room named for its chef. The taisho trained for roughly twelve years in the Tsukiji (築地) orbit — the old heart of the sushi world — before opening here, and the house has settled into a tidy, reservation-only rhythm on the Shonan (湘南) edge of the prefecture, a short hop from the beaches at Enoshima and Katase.

The format is refreshingly simple: two omakase courses, nothing else. The ¥12,000 course runs to twenty-one items with eight pieces of nigiri; the ¥15,000 course we list here stretches to twenty-four items with eleven nigiri, a tsumami-then-nigiri arc with the chef's tuna work — including chargrilled otoro (大トロ) — as a signature. The nigiri ratio is healthy, the room is calm, and at this price it is the most accessible serious counter on the Shonan side of Kanagawa.

Be clear-eyed about chi-no-ri (地の利), though. For all that Fujisawa sits on the Sagami-wan (相模湾) coast — shirasu country, the silver whitebait that defines the Shonan table — the public record does not establish that Kuwae builds its course around the local catch; the training and the tuna focus point to a Tsukiji-school Edomae approach rather than a bay-driven one. A traveler chasing the sea specifically will still find Sushi Nara in Zushi the stronger expression of place. What Kuwae offers is a well-run, affordable counter in an easy location.

Two honest caveats. The counter seats twelve — the top of the range this guide tolerates before intimacy starts to thin — and the evening runs as two seatings with a two-hour limit, which trades away some of the unhurried stillness a single seating allows. For a sushi traveler basing on the Shonan coast who wants a calm, reasonably priced Edomae counter near the trains, Kuwae is a sound, unpretentious choice.
