Being landlocked and far from any Sea-of-Japan port, Nagata leans on daily sourcing from Toyosu (豊洲), Tokyo's great market, rather than a local coastline — the same inland answer Nagano's other counters give, minus the long-haul direct-port web of the prefecture's leaders. The shari is the local touch: Grade-A Koshihikari from contracted Azumino farmers, cooked with Yatsugatake water, the soft mountain water that defines so much of Shinshu's food and drink. It is, in the chef's framing, kogyu-grade Edomae for a plateau town.
