Not every counter worth mapping is a destination. Sushi Nagata (すしなが田) sits out on the Suwa basin near Chino (茅野), on the high plateau under the Yatsugatake (八ヶ岳) volcanoes in southern Nagano — a part of the prefecture the headline counters of Nagano City and Matsumoto never reach. We include it for honesty of coverage: a genuine, affordable Edomae shop in a region that otherwise has none on this map, framed for exactly what it is rather than dressed up as more.

The work here is straightforward and stated plainly on the restaurant's own site. Being landlocked and far from any Sea-of-Japan port, Nagata leans on daily sourcing from Toyosu (豊洲), Tokyo's great market, rather than a local coastline — the same inland answer Nagano's other counters give, minus the long-haul direct-port web of the prefecture's leaders. The shari is the local touch: Grade-A Koshihikari from contracted Azumino farmers, cooked with Yatsugatake water, the soft mountain water that defines so much of Shinshu's food and drink. It is, in the chef's framing, kogyu-grade Edomae for a plateau town.

The honest measure of this room is its modesty. The dinner spend sits around ¥6,000 to ¥8,000 — far below the prefecture's headliners and below our satisfaction band — and the Tabelog mark is low, around 3.04 on a thin record, which we report rather than hide. The room is not a pure kobako either: a short counter shares the space with tables and a private room, so the intimacy is partial.
