Sushi Yumoto (鮨湯もと) sits on the omotesando (表参道), the temple approach road that climbs toward Zenkoji (善光寺), the ancient pilgrimage temple that gave Nagano City its reason to exist. To arrive is already to have travelled through one of Japan's oldest sacred high streets — and the room at the end is the purest kobako in the prefecture: seven seats at a single plank of Kiso hinoki (木曽檜) cypress, four more in a private room, reservation-only, with the last guest seated by seven in the evening. No second turning, no walk-ins, no drift. By the axes of small room and slow rotation, nothing else in Nagano scores higher.
Chef Yumoto Takashi (湯本孝司), born in 1977, came up through the sushi room of the Hotel Metropolitan Nagano before sharpening his craft in Tokyo's Kagurazaka (神楽坂) quarter, then returned to open this counter in December 2009. Being inland, he leans on Toyosu — buying superb tuna and the rest through the great Tokyo market's wholesalers rather than off a local boat — but threads in the textures of home: aka-zu (赤酢) red-vinegar shari built on Koshihikari rice from Iiyama (飯山), the snow-country north of the prefecture, served across that cypress counter. It is a quiet, composed, self-selecting room, the kind of place an omakase-only policy and an early last seating tend to fill with people who came to pay attention.
The honesty this entry owes you is about evidence rather than intent. The setting and the format are close to ideal, but the review record is thin and the scores are modest — a Tabelog mark around 3.07, a Yahoo Maps rating near 3.55 across only a handful of voices — and the published detail on the actual craft (the aging, the shime curing, the technique that separates a good counter from a serious one) is sparse.
