The cooking moves in the classic Shikoku register — local fish, lightly dressed, allowed to taste of themselves. Expect a progression from sashimi through tsumami to nigiri, with Tokushima's sudachi (すだち) citrus brightening the plates and seasonal arrivals like kinmedai (金目鯛), iwagaki (rock oysters), and akagai rounding out the range.
